- 1 cup (240ml) whole milk, warmed to about 110°F*
- 2 and 1/4 teaspoons Red Star® Platinum yeast
- 1/2 teaspoon granulated sugar
- 1/4 cup (84g) honey
- 1 large egg + 1 egg yolk
- 1/4 cup (60g) unsalted butter, melted and slightly cooled
- 1/2 teaspoon salt
- 3 and 1/2 cups (452g) bread flour (spoon & leveled)
- 1/4 cup (60g) unsalted butter, very soft
- 2 Tablespoons (42g) honey
Pour warm milk in a large mixing bowl and sprinkle yeast and ½ teaspoon of sugar. Stir and let sit for 5 minutes. With the mixer on low speed, add the honey, egg, egg yolk, melted butter, salt, and 3 cups of flour and combine well. The dough should be thick, yet soft and easy to pull away from the bowl. If it’s too sticky, add more flour. Then, knead the dough for 2 minutes and place into a greased bowl and let sit in a warm environment for 2 hours. Next, cut the dough in half and each half into 8 equal pieces that are about ¼ cup each. Arrange them in a greased 9x13 baking pan. Let sit for another hour to rise and puff up. Preheat the oven at 350°F and bake the rolls for about 20 minutes until the tops are golden brown. In the meantime, prepare the ingredients for the creamy honey butter.
